"Not the first time I've ordered these. Special occasions and mothers day I order them for a feast. Trim the fat, render that into tallow, then cook low and slow on my smoker at 225. Once they stall, add some of the tallow, wrap in butcher paper and cook until probe tender. Last ordered went to 207 internal before they were tender enough. Rested for an hour in the cooler for the ride up to mom for her mother's day dinner. Didn't need a knife to cut them, used the fork. They were appreciated this year just as years before. Increased price since my last order, while understandable, does hurt. Can't order 2 racks like I used too, have to stick with one with the price+shipping. But still, it's a sought after cut that you can't find just anywhere, and definitely not with the quality that's to be expected from Simpson's"
