At Simpson's Meats, we often joke that titles don’t hold much weight around here. As a close-knit team, we all pitch in and wear multiple hats, working hard to ensure our customers are satisfied and our products consistently meet the highest standards of quality.

President and Co-Founder

Jim Simpson

Jim is a fourth-generation farmer proudly working the same land his ancestors settled in 1888. Born and raised in Athens, TN, Jim grew up immersed in the farming lifestyle, learning the values of hard work, stewardship, and family tradition. He left the farm to pursue a degree in accounting at the University of Tennessee, which led to a successful 18-year career in the financial industry in Memphis and Knoxville.

Despite his professional achievements, Jim’s heart was always on the family farm. He eventually returned home to Athens to partner with his brother Joe in managing Simpson Farms, carrying on their family’s agricultural legacy. In 2012, Jim teamed up with Jason Parkerson to co-found Simpson's Meats, a venture aimed at expanding the reach of their farm’s premium, grass-fed beef and providing families across the country with high-quality, sustainable meat products.

Jim takes immense pride in continuing the heritage of Simpson Farms while innovating to meet the needs of today’s customers. When he’s not working on the farm or overseeing operations at Simpson’s Meats, Jim enjoys spending time with his wife, Christy, and their four children—Jake, Luke, Thomas, and Leighton. Whether working the land or raising his family, Jim remains dedicated to the values that have guided his family for generations: integrity, hard work, and a commitment to excellence.

Co-Founder

Jason Parkerson

Jason, a Knoxville, Tennessee native, is a devoted husband to Dotti and proud father of Taylor and Caitlin. With a strong work ethic shaped by his 27.5-year career at UPS and his hands-on experience running a cattle operation at his farm in Loudon, TN, Jason brought his passion for farming and business together when he co-founded Simpson’s Meats alongside Jim.

After retiring from UPS, Jason poured his energy into building Simpson’s Meats from the ground up. He plays a critical role in the day-to-day operations, focusing on USDA compliance and HACCP standards to ensure the highest quality and safety in every product. In addition to overseeing the shop's operations, Jason takes pride in leading and supporting the team, fostering a collaborative environment built on hard work and dedication.

Jason’s lifelong connection to farming, coupled with his commitment to quality, has been instrumental in making Simpson’s Meats a trusted source for premium, farm-raised beef. Outside of work, Jason enjoys spending time with his family, tending to his farm, and continuing the traditions that have defined his life and career.

Director of Operations

Sam Bruce

Sam Bruce joined Simpson’s Meats in 2021, bringing a wealth of knowledge and experience from his background in the food and catering industry. His journey with the company began in shipping and fulfillment, where he spent several years ensuring that every order was delivered with precision and care. In recent years, Sam has transitioned into marketing and operations, where he now combines his logistical expertise with a creative vision to drive growth and enhance the customer experience.

Sam’s deep passion for food and commitment to quality have fueled his mission to expand Simpson’s Meats, making premium, farm-raised meats accessible to more families across the country. His dedication to excellence is matched by his belief in the importance of connecting people with the very best products.

Originally from Knoxville, TN, Sam is a proud husband to Katie Caroline and father to their son, Charlie. When he’s not working to grow Simpson’s Meats, he enjoys spending time with his family, exploring the culinary world, and playing golf.

Eli Jackson

Eli Jackson hails from Asheville, North Carolina, and is the proud husband of Mallory Jackson. He joined Simpson’s Meats in June 2024, bringing with him a wealth of experience in marketing and logistics from previous roles.

As the Head of Marketing, Eli is dedicated to showcasing the quality and values of Simpson’s Meats to customers nationwide, combining his expertise in branding and strategy to strengthen the company's presence both online and offline. In addition to leading marketing efforts, he also manages the e-commerce fulfillment team, ensuring a seamless customer experience from the moment an order is placed to when it arrives at the door.

Eli’s passion for connecting customers with high-quality, farm-raised products aligns perfectly with the mission of Simpson’s Meats. When he's not crafting campaigns or optimizing fulfillment processes, Eli enjoys spending time with his wife and playing golf.
