Simpson's Guanciale (cured hog jowls) start with naturally raised Tennessee hogs which are raised without added hormones or antibiotics.  Once the hog jowls are butchered, our artisan partners in Atlanta work their magic of curing our locally grown hog jowls with experience, time, and Olde Virden’s chili peppers grown in Knoxville, Tennessee!  Great for starting sauces, pasta, or to be used as a seasoning meat in general.
